Description

Finished cheese with hay, seasoned, sheep's milk.

A sheep cheese seasoned long on a hay bed, according to ancient peasant traditions.

Cacio Fænum is a sheep cheese refined in the hay with typically bitter taste. The housewives accompany it carefully and passionately throughout all stages of maturation before being laid on a scented hay cushion. Here the cheese goes through a slow fermentation that melts flavors and transforms aromas creating something completely new, refined and special. This ancient refining technique has been recovered to rediscover creatively the original peasant traditions.
