Description

Cheese in the historic Sogliano al Rubicone pit, seasoned, made from sheep's milk

Formaggio di Fossa di Sogliano DOP is one of our most beloved products. The tradition of seasoning shapes in the pits dates back to medieval times, when farmers rented from cheese producers tuff pits originally used for storing grain. Here, the particular temperature and humidity conditions create an ideal environment for many processing operations.
The chemical, physical and microbiological properties that make Formaggio di Fossa di Sogliano DOP a distinct product.
We season our best sheep in the pits and after three months of staying, the shapes return to light remodeled with irregular contours and a typically oily surface.
